Ultimate Strawberry Banana Rice Pudding Recipe
Tim's recipe may have come in second place (last place) in our freeze dried breakfast contest, but that's only because Renee's Savory Grits were SO GOOD. We expect to enjoy rice pudding over and over.
In our latest recipe face-off, Renee’s Savory Grits destroyed Tim’s Strawberry Banana Rice Pudding, but that’s only because the grits were just sooo good. Rice pudding was an outstanding recipe on it’s own, especially for folks who like to keep things sweet in the morning.
Even though this recipe isn’t this year’s champion, we wanted to share it so folks can try both out on their own out there. Let us know which you think should be the winner!
Recipe: Strawberry Banana Rice Pudding (~4 servings)
Required Equipment:
A Freeze Dryer. Ours (which we HIGHLY recommend) is the Harvest Right Small Home Pro.
Ingredients:
1 cup uncooked sticky rice
4 cups oat milk
1/4 cup brown sugar
2t ginger
2t cinnamon
2t vanilla
2 bananas
~10 strawberries
Preparation Instructions (at home):
Add rice, oat milk, brown sugar, ginger, cinnamon, and vanilla to a pot and bring to a boil for 20+ minutes, until rice is cooked and mixture has thickened, then remove from heat.
The goal is a pudding texture (see here) — if it gets too thick before the rice is fully cooked, add water and keep cooking.
Slice bananas and strawberries into bite-sized pieces.
Mix bananas and strawberries into rice mixture.
Spread evenly on freeze dryer trays and have your freeze dryer run a full cycle. Ours took approximately one day to complete.
Package into 4 mylar bags for single-portion servings on the trail!






Rehydration Instructions for the Trail (per serving):
Empty freeze-dried meal into your backpacking cookware and cover with about 1 cup of water.
Bring to a boil.
Reduce heat to your stove’s lowest setting and boil for about 1 minute, stirring constantly. Add water if it starts to get too thick — maintain a thick (but not burning consistency).
Let cool and enjoy!
Note: We expect this recipe to cold-soak beautifully, but since it’s brand new we haven’t tried that yet. To cold soak, add water to rice pudding and let it sit for about an hour, shaking or stirring occasionally. (If you do this method, please let us know how it goes!)
